Our cheese making at the inn continues to be a huge success and we are already planning the 2025 cheesemaking class at The Addison on Amelia Island with Linda and Larry Faillace from Three Shepherds Farm in Warren VT. This 3-day class will be held at The Addison on Amelia Island January 17 – 20, 2025.

Spend the weekend in historic downtown Fernandina Beach, FL learning the secrets of cheesemaking and making cheese to enjoy at the inn and take home to share with friends. The class includes making a variety of cheeses, breakfast each morning at the inn, a pasta lunch with cheese made Saturday morning on Saturday, a wine and cheese tasting for lunch on Sunday, and an evening social hour with complimentary beer and wine Friday, Saturday, and Sunday at the inn. Also included is dinner Saturday evening at Burlingame Restaurant, and a pizza-making class and craft brew tasting at First Love Brewing Monday before departure.

Schedule

Friday
Cheese students arrive by 3 PM to get settled in and ready for a weekend of fun and delicious activities. Included in the course is the “Three Shepherds Artisanal Cheesemaking Manual” complete with lots of fascinating cheese information and all the necessary recipes for the weekend. Immediately following the evening social hour at 5:00 PM, Larry and Linda will lead a short introductory discussion followed by the starting of two cheeses. These cheeses require a full night of incubation and transformation into curds and whey. Dinner will be on your own and the innkeepers, Lisa and Ron, are happy to make recommendations and reservations for you.

Saturday
Class begins after breakfast (offered 8:30 AM – 10 AM) and includes a full day of hands-on cheesemaking along with discussions of the history and discovery of cheesemaking, the principles of artisan cheesemaking, the types of milk needed for cheesemaking (as well as those to be avoided), and the tools and ingredients required for the foolproof creation of delicious cheeses at home. We will complete the soft-ripened cheese and Quark begun on Friday evening, make a batch of Feta, as well as some whole milk Ricotta.

The Faillaces will also work with the class to make their signature lunch, based on the morning’s activities. The evening social hour begins at 5 PM and dinner will follow at Burlingame Restaurant at 6:30PM. A $50 dinner gift certificate per couple is included in the package.

Sunday
Another day of cheesemaking begins after Sunday breakfast. Students will complete the cheeses made on Saturday, including a discussion and demonstration of salting and brining. The class will also make the always popular fresh Mozzarella, as well as whey Ricotta. The highlight of Sunday is Linda’s cheese tasting and wine pairing lunch. Lunch is like a class of its own in cheese appreciation, pairing, and serving, and includes a wonderful array of select cheeses. Following the evening social hour, dinner will be on your own and the innkeepers, Lisa and Ron, are happy to make recommendations and reservations for you.

Monday
An extra special bonus class will follow breakfast and complete the fun-filled cheesemaking weekend. Attendees will walk over to First Love Brewing for a hands-on demonstration of stretching dough, food and beer pairing, brewery tour, and pizza making with owners, Kevin and Jessie O’Brien. Class participants will enjoy a lunch with their homemade pizza, beverage of choice, and a growler to enjoy at home.

Late checkout at 1 PM will be available for class participants.

Prices, Provisions & Policies

$550 per person plus room rate – requires a 3-night stay.

Class is limited to 10 participants and Rooms 1 – 5 are available January 17 – 20, 2025  for this event.

Cancellations received 3 – 6 months prior to the class will result in a 25% cancellation fee per person if the class is not rebooked. Cancellations received less than 3 months prior to the class will result in a 50% cancellation fee per person if the class in not rebooked. This is in addition to the $50 cancellation fee for the room.
